Zucchini omelet

Quick, easy and healthy meal.

Ingredients

  • 4  home laid eggs
  • one medium size zucchini
  • 50 ml milk or cream
  • 1 teaspoon of olive oil
  • freshly ground black pepper
  • salt
  • a dash of thyme or marjoram (optional)

Slice the zucchini with a cucumber slicer. Heat up the oil in a casserole and add the sliced zucchini. Roast the zucchini until the slices get  glaze and soft.

Meanwhile, mix your eggs with the milk or cream. Give them a good whisk. Add the mix to the zucchini slices and turn down the  heat. Season with salt and pepper and/or the herbs. Put a lid on the casserole and let cook for about 3 minutes.

To turn the omelet, let it slide onto the lid, put the pan on the lid and turn it back round. Put it back on the heard for 2 more minutes.

Serving suggestion: Sprinkle some freshly grated parmigiano cheese over the omelet – e basta!-
